Easy and Healthly Quinoa Bowl Recipe

Ingredients:

  • 1 cup of quinoa
  • 1 can of black beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1 small red onion, diced
  • 1/2 cup tomatoes, halved
  • 2 cups of baby spinach
  • 1 lime, juiced
  • 2 tbsp. olive oil
  • 1 tsp. cumin
  • Salt and pepper to taste

Instructions:

  1. Rinse quinoa in a fine mesh strainer and add it to a medium-sized pot. Add 2 cups of water and a pinch of salt, and bring to a boil over high heat. Reduce heat to low, cover, and let simmer for 15–20 minutes, or until the quinoa is cooked and fluffy.
  2. While the quinoa is cooking, heat a large skillet over medium-high heat. Add olive oil, red onion, and red bell pepper. Saute for 5-7 minutes, or until the vegetables are soft and slightly charred.
  3. Add the black beans to the skillet and stir well. Season with cumin, salt, and pepper to taste. Cook for another 2–3 minutes, or until the beans are heated through.
  4. In a large mixing bowl, add the cooked quinoa, sauteed vegetables and black beans, tomatoes, baby spinach, and diced avocado.
  5. Drizzle lime juice over the top and toss the ingredients together until well combined.
  6. Serve the quinoa bowl in individual bowls and enjoy!
