Easy and Healthly Quinoa Bowl Recipe

- 1 cup of quinoa
- 1 can of black beans, drained and rinsed
- 1 red bell pepper, diced
- 1 avocado, diced
- 1 small red onion, diced
- 1/2 cup tomatoes, halved
- 2 cups of baby spinach
- 1 lime, juiced
- 2 tbsp. olive oil
- 1 tsp. cumin
- Salt and pepper to taste
- Rinse quinoa in a fine mesh strainer and add it to a medium-sized pot. Add 2 cups of water and a pinch of salt, and bring to a boil over high heat. Reduce heat to low, cover, and let simmer for 15–20 minutes, or until the quinoa is cooked and fluffy.
- While the quinoa is cooking, heat a large skillet over medium-high heat. Add olive oil, red onion, and red bell pepper. Saute for 5-7 minutes, or until the vegetables are soft and slightly charred.
- Add the black beans to the skillet and stir well. Season with cumin, salt, and pepper to taste. Cook for another 2–3 minutes, or until the beans are heated through.
- In a large mixing bowl, add the cooked quinoa, sauteed vegetables and black beans, tomatoes, baby spinach, and diced avocado.
- Drizzle lime juice over the top and toss the ingredients together until well combined.
- Serve the quinoa bowl in individual bowls and enjoy!
