Exotic Thai Flavours at Chill Bar : The Vannasut Hotel & Spa

In this episode of Feasts and Flavours, we went to newly opened Chill Bar situated at The Vannasut Hotel & Spa. Perched on the top floor, the bar offers a stunning view of the city below. The hustle and bustle of the city is reduced to a distant hum as you take in the beautiful skyline and the view of Boudhanath Stupa.

The décor of the bar is sleek and modern while the ambiance of the bar is sophisticated and refined. At night, the city comes alive with warm lights, creating a romantic and magical atmosphere that is unparalleled. They offer wide selection of food items however, Thai cuisine is their specialty.

Pork Ribs deep fried salt & pepper

The aroma of pork ribs fills the air, mixed with the pungent aroma of garlic and the sweet fragrance of onions. As the stir-fry comes together, the flavors intensify, with the addition of savory salt and fiery pepper, adding a hint of heat that tickles the taste buds.

The subtle sweetness of the capsicum balances the saltiness of the pork ribs while adding a crunch to the dish. The spring onion, meanwhile, gives the whole flavor profile a crisp, spicy tang. The soft pork ribs melt in your mouth as you bite into them, producing a flavorful meatiness that is nicely complemented by the other components.

Volcano Chicken

If you are here, you have to try their special Volcano Chicken. You can also choose pork or seafood. Originated from Thailand, the dish is literally served in a volcano look alike cover with fire oozing out. The name “volcano chicken” comes from the fiery and explosive nature of the dish, which is reminiscent of the erupting volcanoes found throughout Thailand.

The chicken is first boiled in a flavorful stock made with spices, herbs, and aromatics, which infuses the meat with rich and savory flavors.

After boiling, the chicken is then fried to give it a crispy and slightly charred exterior, which contrasts beautifully with the tender and juicy meat inside. The combination of the boiled and fried cooking methods creates a unique and unforgettable taste that is both bold and satisfying.

Served with two types of sauces; spicy seafood sauce and sweet chilli sauce, offering layers of flavours within it. Overall, volcano chicken is a delicious and creative take on a beloved Thai classic, with a rich and layered flavor profile that is sure to please any palate.

Sticky mango rice

Sticky mango rice is a heavenly dessert that combines the creamy sweetness of coconut milk with the fresh and tangy taste of mango. The sticky rice, which is cooked in coconut milk, has a soft and chewy texture that perfectly complements the juicy and ripe mango.

The dish is topped with a generous amount of toasted sesame seeds and moong dal, adding a nutty and crunchy texture to the creamy and smooth dessert.

This dessert that is both satisfying and refreshing, with a tropical and exotic flavor that will transport you straight to the heart of Thailand.
