Punjab Ki Rasoi- A Taste of Punjab at Vivanta Kathmandu
Vivanta Kathmandu has brought the flavors of Punjab to life with its food festival, Punjab Ki Rasoi, a tribute to the Punjabi festival of Lohri. The festival started on January 10th, has been so well received that it continues to delight food enthusiasts. Chef Sanjeev Kumar Suman and his team brought this event to life, offering more than just food—it’s an experience that takes you straight to Punjab.

Guests are welcomed with Shardai, a traditional Punjabi drink made with almonds, fennel seeds, vetiver, cardamom, saffron, milk, and sugar. This rich and aromatic drink sets the mood, giving you an instant sense of Punjabi hospitality.
The ambience at Punjab Ki Rasoi is equally vibrant. Punjabi songs play in the background, adding a festive touch, while the decor reflects the warmth and liveliness of Punjab.
The highlight of the festival is the Punjabi Thali, available in both vegetarian and non-vegetarian options. Each thali is a delightful spread of traditional Punjabi dishes that cater to diverse tastes.

Vegetarian Thali
- Bhutteyan Da Kebab: A smoky, flavorful corn kebab.
- Paneer Makhani: Soft paneer cubes in a rich, creamy tomato-based gravy.
- Dhingri Mutter: A unique dish of mushrooms and green peas tossed in onion, tomato, and fresh coriander.
- Rajma Raseela: Classic Punjabi-style kidney beans.
- Sarson Da Saag: Mustard greens cooked with authentic spices.
- Punjabi Vegetable Pulao: Fragrant rice cooked with vegetables.
- Makai Ki Roti: Cornbread cooked in a clay oven.
- Amritsari Kulcha: A flaky, stuffed bread filled with spiced mashed potatoes.

Non-Vegetarian Thali
The non-vegetarian thali includes all the vegetarian delights, with the addition of:
- Amritsari Fish: A crispy and flavorful fish dish.
- Murga Makhani: Butter chicken, rich in flavor and perfectly cooked.
For those who prefer a customized experience, individual dishes can also be ordered from the menu.
Accompaniments: Kachumbar Salad and pickles which complimented the thali perfectly.
For Dessert: Panjiri, a traditional sweet made from whole wheat flour, sugar, ghee, nuts, and dried fruit.
