High above the lively buzz of Naxal, perched atop the Holiday Inn Express, Fu Asian Bar & Kitchen offered more than breathtaking rooftop views. This past Shrawan (July 17 – August 16), the restaurant transformed plant-based dining into an unforgettable journey with its limited-time “Soulfully Vegan” menu—a vibrant, flavor-forward experience that delighted diners with inventive, indulgent dishes.

The moment diners stepped into Fu’s breezy rooftop escape, a sense of calm and anticipation washed over them. The open sky, the hum of the city below, and the lively energy of the space invited guests to slow down, settle in, and savor what was to come.

The Soulfully Vegan menu delighted guests with a feast of color, texture, and creativity that redefined plant-based dining. From delicate dumplings to indulgent bao buns, each dish felt like a discovery.

Vegetable Rainbow Roll
A visual feast and textural delight, this roll was a masterclass in clean eating. Crisp asparagus, buttery avocado, earthy shiitake mushrooms, and tofu were wrapped in delicate rice paper. Dipped in soy or savored solo, every bite was creamy, crunchy, and umami-rich.

Vegan Short Rib Bao
The crown jewel of the menu. Meaty green jackfruit, slow-cooked in five-spice and smoky BBQ sauce, was tucked into a cloud-like bao bun. Rich, sticky, sweet, and perfectly messy, it was a dish that satisfied even devoted meat lovers.

Truffle Baby Corn Mushroom Dim Sum
Wrapped in dramatic beetroot skin, these dumplings revealed baby corn and shiitake mushrooms inside, elevated with a whisper of truffle oil. Paired with punchy chili soy sauce, each bite was deep, earthy, and utterly addictive.

Jade Dumplings
Bright green and silky, these dumplings were stuffed with asparagus, green onions, and crunchy water chestnuts. Dipped in a nutty soy-sesame sauce, they delivered a symphony of textures and a toasty, umami-laced finish that kept guests coming back for more.

Strawberry Nectar
Summer in a glass. Sweet strawberry syrup met lemon juice and a sparkle of Sprite over clinking ice cubes. Bright, bubbly, and guilt-free, it was ideal for a mindful Shrawan toast.

Chatyang
This cocktail turned up the heat with tequila infused with Nepal’s beloved spice blend, layered with zesty lime, Cointreau, and lush passionfruit. Tropical notes hit first, followed by a lingering smoldering chili warmth.
