Onion Pakauda Recipe for Monsoon

Ingredients:
- Onions – 2 (Thinly Sliced)
- Gram Flour (Besan) – ¾ Cup
- Rice Flour – ¼ Cup
- Water – 2 Cups
- Salt – To taste
- Garlic Powder – 1 Teaspoon
- Carom Seeds (Ajwain) – ½ Teaspoon
- Lemon juice – To taste
- Red Chilli Powder – ½ Teaspoon
- Turmeric Powder – ¼ Teaspoon
- Green Chillies – 2 (Finely Chopped; Optional)
- Oil – For frying
- Chaat Masala – To taste (Optional)
Method:
- Prepare the Onions: In a mixing bowl, combine the thinly sliced onions with salt, garlic powder, carom seeds, red chilli powder, turmeric powder, chaat masala, and lemon juice. Mix well so that the onions are evenly coated with the spices.
- Mix the Flours: Add the gram flour and rice flour to the spiced onions and mix thoroughly. Let the mixture rest for 20 minutes to allow the flavors to meld.
- Prepare the Batter: After 20 minutes, add water gradually to the mixture, mixing well with your hands to form a thick batter. Meanwhile, heat oil in a deep frying pan over medium heat.
- Add Oil to Batter: Once the oil is hot, add 1 ½ tablespoons of hot oil to the batter and mix well. This will help make the pakaudas extra crispy.
- Fry the Pakaudas: Carefully drop small portions of the batter into the hot oil. Fry the pakodas in batches, stirring occasionally to ensure they don’t stick together. Fry until they turn golden brown and crisp.
- Drain and Serve: Remove the pakaudas with a slotted spoon and drain them on absorbent paper to remove excess oil. Sprinkle it with chaat masala for an extra burst of flavor.
