Krishna Janmasthami Special: Homemade Curd

Ingredients:
-Milk (full cream or whole milk works best)
-A clean container (ceramic or stainless steel)
-A spoon
-A clean cloth

Boil the Milk
Start by pouring 1 liter of milk into a clean container. Place the pot on medium heat and bring the milk to a boil, stirring occasionally to prevent it from sticking to the bottom. Once it starts boiling, let it simmer for a few minutes, then remove it from the heat.

Once it is lukewarm, transfer the milk to the clean container. Let it cool to room temperature.

Add Starter Culture (optional)
If you have a starter culture from previous batches of curd, add a small amount to the milk. This will help the fermentation process start faster.

Ferment the Milk
Cover the container with a clean cloth and let it sit undisturbed in a warm place for 6-8 hours, or overnight. The warm temperature will encourage the bacteria to multiply and turn the milk into curd.

Check the Curd
After the fermentation period, gently stir the curd. If it has thickened and has a slightly sour smell, it’s ready.

Store the curd
Transfer the curd to a refrigerator for storage. It can be consumed directly or used in various recipes.
